Bagels

Baking is one of my favorite things to do and baking bread is at the very top of that list. I'm always on the lookout for a new recipe and yesterday I found this bagel recipe. Couldn't wait to try it out today and I have to say it was very easy and well worth it.
You will need:
1 3/4 tsp active dry yeast
2 cups bread flour
1 cup whole wheat flour
1 tsp salt
1 cup plus 1 tbs water
2 tbs honey
Toppings: sesame seeds, poppy seeds
Place all ingredients in your bread machine and use dough setting. After the first kneading cycle, press stop and let dough rest for 60 minutes. Press start and let machine run for 60 seconds to punch down dough. Remove dough and let rest for 5 minutes.
Ich backe fuer mein Leben gerne und am allerliebsten backe ich Brot. Immer wenn ich ein neues Rezept finde, juckt es mich in den Fingern und ich kann es kaum abwarten es auszuprobieren. Gestern habe ich ein Rezept fuer Bagels entdeckt und heute mittag habe ich es gleich gemacht. Ging superleicht und die Bagels sind total lecker.
Der Teig nachdem ich ihn aus der Brotbackmaschine geholt habe.
Divide dough into 10 equal (more or less) pieces. Roll dough pieces into 10 inch long ropes, form into a circle, overlapping the ends slightly. Tuck under and pinch gently. (I didn't pinch some of mine enough and they started to separate in the water.) Sprinkle cookie sheets with cornmeal and let the bagels rise (covered with a clean cloth) for 30 minutes.

Nach 30 Minuten.
Bring 3 quarts of water to a boil, add 1 tbs of brown sugar and drop bagels, three at a time into the boiling water. Boil 3 minutes, turning periodically. Remove with slotted spoon and let dry on wire rack.
Bagels muessen fuer 3 Minuten in kochendem Wasser "baden"...
When all bagels have finished boiling , place on baking sheet (sprinkled with cornmeal). Sprinkle with topping and bake at 425 for 15 minutes, turn bagels over and bake an additional 10 minutes or until golden brown.
Nach ihrem heissen Bad laesst man sie abtropfen und streut Sesam oder Mohn darauf.

So sehen sie nach dem Backen aus. Ich finde sie sehen sehr, sehr lecker aus.

In some other and to us rather scary news, Hannah's school was under lockdown this morning. At first they thought a child had brought a gun to school, but later found out it was "only" a knife. It was a 8th grade student and thankfully no one was hurt and Hannah being in 6th grade was not even in the same part of the building. It is very unsettling to get a phone call at work and have to listen to a recording from the principal, telling you the school is under lockdown. There was nothing for us to do, but wait. They would not release any information, nor would they release the students. I'm very grateful for my coworkers, who kept checking online to see if there was any new information. Around noon we finally found out students were back in their regular classrooms and parents were able to check them out if they wanted to. My workday is over at 1:30 and I went straight to Hannah's school to go get her! She said it was scary at first, but after a while they started watching movies in the classroom and things were ok. Thank goodness she has some great teachers and they kept the kids calm and their mind off the situation at hand.

Heute frueh mussten wir alle ganz schoen Angst ausstehen. Ein Schueler in Hannah's Schule hatte angelblich eine Waffe (Pistole oder Gewehr) dabei und deshalb wurde die ganze Schule abgeriegelt und versperrt. Es nennt sich "lockdown" und was das heisst ist, dass die Lehrer sich mitsamt ihren Schuelern in die jeweiligen Klassenzimmer einschliessen bis die Gefahr vorueber ist. Ich bekam gegen 9:00 Uhr einen Anruf vom Rektor (auf Band aufgenommen), dass die Schule unter lockdown waere, aber mein Kind nicht in Gefahr sei. Ich habe daraufhin sofort Greg angerufen und er wusste es auch schon und hatte ueber Internet gelesen, dass der Schueler (8. Klasse) ein Messer dabei gehabt haette und schon von der Polizei von der Schule entfernt wurde. Hannah ist in der 6. Klasse und ist (Gott sei dank) in einem anderen Teil der Schule als die Kinder in der 7. und 8. Klasse. Die Kinder mussten bis 11:15 im verschlossenen Klassenzimmer bleiben und ich erfuhr erst um 12:00 Uhr, dass ich mein Kind nun abholen koennte wenn ich moechte. Da ich bis 13:30 arbeite, habe ich bis dahin gewartet, bin dann aber sofort an die Schule um sie zu holen. Hannah meinte am Anfang hatten alle Kinder Angst und fanden die Sache ziemlich schlimm. Nach einer Weile fing die Lehrerin an Filme zu zeigen und ich bin ihr sehr dankbar, dass sie die kids damit abgelenkt hat. Das Wichtigste ist, niemand wurde verletzt und Hannah ist ok.

  2. My heart goes out to you, Anke, and to Hannah as well. How scary that had to be for you. As parents we like to think we can control the environments (at least to a degree) even when they are away from us in such a setting as their schools. When something like this happens it has to be so unsettling. We tend to think that those sorts of things happen to other people, but don't ever really expect to have it happen in our own lives. I'm grateful that it all worked out for the good in Hannah's situation today. Praying for the safety of our family members on a regular basis is always a needful thing. God has proven that so in the lives of my own family...but that's another story. Perhaps another time I could share that with you.

    On to the bagels! Thank you for sharing the recipe. I love to bake...and my husband really enjoys his bagels, but it is something I've never attempted to do. I actually received an education on the art of bagel making by reading your post. It is so interesting the way they are done. I have made soft pretzels before but it never occurred to me that forming the shape of the bagel would be similar to doing the pretzel. I don't have a bread machine, but do you think I could still do the above recipe by hand? I'd love to make Carroll his very own bagels!

  3. You are such an adventurous baker!!! Bagels now - - - what's next?

    We had to have a lock down at our school once too. One of our students had broken up with a boyfriend (not one of our students) and he drove on campus with a gun in his truck making threatening "noise" at her. We had a lock down and the police were called. He was arrested and hauled away.

    Not the kind of even one hopes for at school, but so thankful that we all knew what to do and did it.

  5. Thank you all for your kind comments. Hannah is doing fine and last night we all had a long talk about what had happened at school.
    The bagels really were very easy to make. Dianna, I think you could definitely make them without the bread machine. I use it because it is a time saver for me.

    deine Angst kann ich gut nachvollziehen. Es ist gut, dass alles noch so verhältnismäßig glimpflich abgegangen ist. Wobei, was sich in den Kinderseelen abspielt, können wir manchmal nicht nachvollziehen.

    bin ja richtig erschrocken was bei Euch los ist!!Man liest ja zur Zeit sehr oft,aber man denkt is ja nicht hier aber dann.....???
